In 1992, a new television food show hit the ABC’s airwaves. With next to no fanfare, the five-minute Consuming Passions presented by Ian Parmenter soon became a major success, selling to 15 countries and screened in South-east Asia through the Asia Pacific network. Recipe collections followed, published in Australia, the UK and Ireland, which have sold close to a million copies.
In response to the show’s popularity, its producers, David Evans and Ian Parmenter formed a company, Consuming Passions Pty Ltd, and soon found their services sought for a number of television and video productions, major events and corporate activities. And demands keep growing …

A hint of history in a recipe I’ve adapted from the sort of fare which would have been served up during the reign of Charles I. It features a tantalising mixture of orange, nutmeg, rosemary, and nuts in a stuffing for a lean loin of pork, plus anchovies, which were widely used at the time. Interestingly they do not provide a fishiness to this dish.
