Icky Sticky Date Pudding with Toffee Sauce

Serves: 6-8

Notes

Although an old English recipe, it’s been doing the rounds of Australian restaurants, especially in the Southwest.

Ingredients

  • 350g dates
  • 2 tsp bicarbonate of soda
  • 125g butter
  • 4 large eggs
  • 350g self-raising flour
  • 2 tsp vanilla essence.

Sauce ingredients:

  • 350g soft brown sugar
  • 250ml whipping cream
  • 250g unsalted butter
  • 2 tsp vanilla essence

Method

Boil dates in 500ml water with the bicarbonate of soda for 5 minutes. Allow to cool till just warm. Add other ingredients, mixing well. Transfer to greased 30cm high-sided cake tin and bake at 160C for 1 hour.

Mix sauce ingredients. Transfer to saucepan and cook over medium heat till it becomes honey brown. Pour over warm Icky Sticky Pudding.

    Rabbit with 39 garlics

    The French have developed several recipes using 40 garlic cloves, presumably the number was chosen on religious rather than culinary grounds. Since we are not in France, and most Australians are less comfortable about using large quantities of garlic, I have compromised in this recipe, which could equally well be done using poultry.
