An exciting way of serving strawberries, it may also be applied to other soft fruits such as bananas, peaches and apricots.
Remove stalks from the strawberries, wash and drain. Melt butter in a heavy frying pan. Add sugar and mix well. Pour in 2 tbsp of brandy. Cook for a few seconds. Toss in the strawberries and warm for 1 minute so they are coated with the mixture. Turn up the heat, pour in the rest of the brandy which has been gently heated. Set alight. When the flame goes out, put strawberries in individual bowls and pour the sauce over them. Serve with yoghurt, chopped nuts and a drizzle of honey.
