Flourless Macadamia Yule Log

Notes

This flourless yule log is a great confection, which can be enjoyed all year round. It’s a fabulous treat, rich with chocolate and nut flavours. Although I use orange marmalade, which complements the chocolate beautifully, you could use apricot or strawberry jam.

Ingredients

  • Separated yolks and whites from 6 eggs (medium)
  • 100g finely ground macadamia nuts (or you could use hazelnuts or almonds)
  • 1½ tsp baking powder
  • 150g caster sugar
  • 2 Tbsp dark cocoa powder
  • ½ tsp lemon juice
  • Pinch salt
  • Icing sugar for sifting
  • Orange marmalade
  • 300ml cream, whipped

Method

In a large bowl, cream the egg yolks with the caster sugar by beating until the sugar has dissolved and a smooth cream is obtained. Stir in ground nuts, baking powder and cocoa. Add a little warm water to soften the mixture (a couple of tablespoons). In another large bowl whisk the egg whites with the lemon juice and salt until stiff peaks have formed. Gently fold whites into the yolk and nut mixture, taking care not to be too vigorous, or the air bubbles in the whites will collapse. Pour into a rectangular baking tin – 37cm x 25cm – lined with greased non-stick baking paper. Bake in oven at 180C for around 20 minutes or so, until base is springy to the touch in the centre. When cool, cover with non-stick baking paper and a tea towel and put in the refrigerator for a couple of hours to chill. When it comes out you’ll notice it has shrunk a little. That’s perfectly normal. Loosen the edges with a knife and turn out onto the sheet of baking paper sprinkled with icing sugar. Spread on marmalade then a covering of whipped cream. Carefully roll up, loosely, using the baking paper to assist in the rolling.(Don’t worry about cracks appearing. After all, logs do look a bit craggy don’t they?) Put on a serving plate. Sprinkle with icing sugar

    Stuffed Zucchini Boats

    Zucchinis come in many sizes and a couple of colours (green and yellow) so they’re very patriotically Australian. They’re also very versatile. This is one of my favourite recipes, zucchinis stuffed with minced chicken, rice with a tomato and herb seasoning. May be made into individual servings with small/medium zucchinis, or one big one. Although I use chicken, vegetarians may care to replace the meat with finely chopped mushrooms. I find children love this dish.
