Salmon with Cashew Cabbage

Fear of fish is still alive and well – and I don’t just mean piranhas! The only challenge with cooking fish is not to overcook it. Here’s a foolproof recipe that’s so simple, you don’t even need a kitchen. You can cook it on an ironing board with your everyday household iron! Terrific served with Cashew Cabbage.

Ingredients

  • 4 pieces of salmon fillet, each app. 125g
  • 1 Tbsp olive oil
  • 1/2 tsp black pepper
  • Sprinkling of salt
  • 2 Tbsp balsamic vinegar
  • 3 Tbsp mirin
  • Garnish: roasted cashew nuts and coriander leaves

Method

Pan fry salmon in olive oil for a couple of minutes each side. Remove to a warm place. Deglaze the pan with balsamic vinegar and mirin allowing it to reduce for 30 seconds. Serve salmon on Cashew Cabbage (see vegetable section), pour over pan juices and garnish with coriander and roasted cashews.
