Baked Barramundi with Parmesan Lemon Crust

Notes

This is a delicious and healthy alternative to fried or grilled fish. It is also very quick and easy. Perfect with freshly caught barramundi, but any thick white fish fillets will work well

Ingredients

  • 1 cup fresh bread crumbs
  • 1 tsp chopped garlic
  • 2 tsp grated lemon rind
  • 2 tbsp chopped parsley leaves
  • 1 tbsp chopped basil leaves
  • 2 Tbsp grated Parmesan cheese
  • 1 tsp fresh lemon juice
  • Salt and pepper to taste
  • 1 Tbsp extra virgin olive oil
  • 4 firm-fleshed white fish fillets, about 150g each

Method

Preheat the oven to 180C. Combine the bread crumbs, garlic, parsley, basil, cheese, olive oil, lemon juice, salt and pepper in a large bowl. Divide into four portions and press onto top of each fillet of fish. Line a shallow-sided baking sheet or pan with baking paper – or smear with oil. Put on fish fillets and bake until cooked through, about 15 minutes, depending on thickness – until the tops are golden brown. Serve immediately, garnished with lemon wedges.
