Mushroom Trio

Serves: 4

Notes

The combination of three distinctly different mushrooms makes this dish a winner. This stir fry recipe relies for its success on having all the ingredients ready and to work quickly, not allowing the mushrooms to stew.

Ingredients

  • 200g enoki mushrooms
  • 200g shitake mushrooms
  • 200g oyster (abalone) mushrooms
  • 2 tsp sesame oil
  • 1 Tbsp peanut oil (or other lightly flavoured oil)
  • 2 Tbsp finely chopped onion
  • 2 tsp finely chopped ginger
  • 2 tsp finely chopped garlic
  • 2 Tbsp salt reduced soya sauce
  • 4 Tbsp mirrin
  • 1/4 tsp white pepper
  • 100g snow peas, blanched
  • 250g cooked thin spaghetti (such as capellini)

Method

In a hot wok or large frying pan over high heat, put the two oils. Stir in onion and when softened, add ginger and garlic. Toss in the mushrooms, a few at a time, stirring constantly. After a couple of minutes, when they have softened a little, add soya sauce. Stir allowing excess moisture to evaporate off. Add mirrin and white pepper and keep stirring. Stir in spaghetti and snow peas. Serve immediately in warmed bowl.

This dish is one of my favourite food temptations. Also one of the first dishes to appear on Consuming Passions. It is simple to prepare with a distinctive flavour all its own. You can do it without the flaming brandy and it’s still bliss…
