Field mushroom schnitzel

Notes

Big field mushrooms are a great substitute for meat, and may be treated much like veal, as in this example.

Ingredients

  • 4 very large field mushrooms
  • 2 eggs, lightly beaten
  • Breadcrumbs or cornflake crumbs
  • Olive oil for cooking

Method

Trim stalks and edges of mushrooms so that they are as flat as possible. Dunk mushrooms in beaten eggs seasoned with a little salt and pepper. Roll in breadcrumbs, shaking off excess. Pan fry in olive oil for four or five minutes.
