Cheese Polenta Fritters

Notes

Great, simple, hot cheesy bites that make perfect appetisers. I like to serve them with a sweet chilli and coriander dipping sauce.

Ingredients

  • 400mls water
  • 100g instant polenta + 20g for coating
  • 25g Australian butter
  • 700g cooked potatoes
  • 100g grated Australian Swiss or Lactos St Claire cheese
  • 50g grated Australian Parmesan cheese
  • Salt and pepper to taste
  • Oil for shallow frying
  • Salt and pepper

Method

Bring water to rapid boil. Toss in 100g polenta. Cook over low heat until it comes away from the side of the pan. Remove from heat, stir in butter and salt and pepper. Roughly mash the potatoes. Mix potatoes with cheeses. Stir into the polenta. Season. Mix well. Divide into patties. Coat with the additional polenta. Shallow fry for three or four minutes on each side. Drain on paper towel.
