Banana bread

The perfect recipe for using up those over-ripe bananas.

Ingredients

  • 300g ripe bananas, mashed with 1 tsp lemon juice
  • 180g sugar
  • 180g plain flour
  • 2 eggs
  • 50g milk
  • 50g nut oil
  • 10g baking powder
  • 100g grated pecan nuts
  • 100 grated bitter chocolate

Method

Combine bananas, sugar and flour. Add eggs, milk, oil and baking powder. Continue mixing for two minutes. Add nuts and chocolate. Pour into greased bread tin and bake for 45-50 minutes at 180°C.

    Ratatatouille

This recipe mixes colourful combinations of eggplant, zucchini, capsicums and tomatoes along with red cabbage and onions and herbs to make a delightful dish which may be served hot or cold. I call it RATATATOUILLE since it is based on the classic French ratatouille but has a little more going for it, a little more “tatat”.
